Easy to make and delicious energy balls to snack on. Eat raw or bake for 10 minutes to make granola style bites! Perfect as an everyday snack and super tasty when baked and dipped in a coconut yoghurt!
This is one of our favourite energy ball recipes to keep the energy up during the winter as we simply love this combination of cinnamon, pecans, walnuts and dried apples. Comforting and warming on the soul, yet a totally natural treat without gluten, dairy, refined sugar or any preservatives. Have a try!
100g of pecans
100g of walnuts
100g of dates
50g of dried apple
2tsp of cinnamon
1-2tbsp of maple syrup
1-2tbsp of freshly squeezed lemon juice
a drop of lemon essential oil for extra fragrance (we like 100% pure essential oils from Leonie Klein)
a pinch of ground cardamom
1. Place all the dry ingredients (walnuts, pecans, dates, dried apple, cinnamon) into a food processor and blitz until it gets finely ground and a bit sticky.
2. Add maple syrup, lemon juice and essential oil (if using) and blend until a sticky mix is formed.
3. Roll into balls and eat straight away or bake for 10-15 minutes in the oven at 160 degrees.
4. If raw, keep the balls in an air tight container in the fridge for up to 2-3 weeks. If baked, leave to cool for a few minutes before eating/storing. The baked ones can be stored in an air tight container at a room temperature for 2-3 weeks.
